My Best Banana Bread



I call this banana bread my best because it’s really the best banana bread that I’ve ever had. It has dark chocolate chips, coconut and nuts, something I think are necessary. Also it’s a very simple one-bowl recipe. The result is moist, delicious and flavorful bread that I will have a slice for breakfast and another one for snack. Maybe one more after dinner.


Ingredients (one loaf):

3 large eggs
1 1/2 cups granulated sugar
2 large very ripe bananas, mashed
3/4 cup vegetable oil
1 3/4 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup dark chocolate chips
3/4 cup sweetened shredded coconut
3/4 cup chopped walnut


Preheat oven to 350F. Grease and line a loaf pan.

In a bowl, whisk together eggs, sugar, banana and oil until smooth.

Sifted in flour, baking soda, baking powder and salt. Stir until just combined.

Fold in chocolate chips, coconut and walnut.

Pour the batter into the prepared loaf pan, and bake for 50 to 60 minutes.

Remove from oven and place on rack to cool.
