My Best Banana Bread

I call this my best banana bread because it’s really the best banana bread that I’ve ever had. It has dark chocolate chips, coconut and nuts, something I think are necessary. Also it’s a very simple one-bowl recipe. The result is moist, delicious and flavourful bread that I will have a slice for breakfast and another one for snack. Maybe one more after dinner.

In case you like it plain, just that perfect banana flavoured goodie, I am happy to tell you that it also works fine without the chocolate, nuts and dried fruit. I’ve tried that! It really worked

Ingredients (one loaf):
3 large eggs
1 1/2 cups granulated sugar
2 large very ripe bananas, mashed
3/4 cup vegetable oil
1 3/4 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup dark chocolate chips
3/4 cup sweetened shredded coconut
3/4 cup chopped walnut

Directions:
Preheat oven to 350F. Grease and line a loaf pan.
In a bowl, whisk together eggs, sugar, banana and oil until smooth.
Sift in flour, baking soda, baking powder and salt. Stir until just combined.
Fold in chocolate chips, coconut and walnut.
Pour the batter into the prepared loaf pan, and bake for 50 to 60 minutes.
Remove from oven and place on rack to cool.

  1. This is the third time I’ve made it and I still cannot get it cooked all the way through without a raw in the middle. I bought a new pan and it’s 9 1/2 x 5 1/2 . And I’m still having to cook it longer, I had to cover it with foil to keep it from burning. I cooked it 80 minutes! what else can I do?

I made this the other day I did not put the coconut in it, I think I added a little too much banana because I had to cook it 10 minutes longer and it was still a little bit raw in the middle not enough to not make it be good. It was amazing and I used avocado oil! The best banana chocolate chip nut bread I’ve ever had. Next time instead of using regular sugar I’m going to use raw sugar.

    Maybe one with less sugar, olive oil instead of vegetable oil,
    almond or coconut flour?
