Polka Dots Steamed Cupcake (Apam Dot Dot)

People know me know that I love polka dots. And stripes. Maybe it’s something about Virgo. I just kind of like patterns. So when I came across this recipe, I couldn’t help but started to make these lovely cupcakes.

Honestly I was a little sceptical about steam cake. It’s just not my cup of tea. I prefer something more buttery and toasty. But these steam cakes brought out the softness and sponginess that no other cakes can possibly compare. And I believe the key is to beat the eggs for a very long time to create the air inside the cakes.

Ingredients (10 regular sized cupcakes):

2 1/4 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3 large eggs
1 1/4 cups granulated sugar 
1/2 cup plus 2 tablespoons milk
1 tablespoon vanilla extract
1 drop pink food coloring paste
1/4 cup strawberry jam
 

Directions:

Heat up steamer. Place cupcake liners into 10 ramekins.

Sift together flour, baking powder and salt. Set aside.

In a bowl of a standing mixer with a whisk attachment, mix eggs and sugar on high for 10 minutes, until very pale and light.

Mix in milk and vanilla, then fold in dry ingredients.

Add coloring paste into 1/4 cup batter. Transfer colored batter to a piping bag with a tiny round tip.

Spoon 3 tablespoons of batter into each ramekins. Add a teaspoon of jam, then cover with another 2 tablespoons of batter.

Pipe small pink dots on top.

When the steamer is ready, place in the ramekins and steam on low heat for 10 to 15 minutes.
