Banana Chocolate Chip Donuts with Dulce de Leche

Happy December! So we are at this time of the year again when every one has started to get really busy. Parties, shopping, vacations…just try to have a bit more fun before a big wave of new year arrives.

For myself, it’s pretty non-stop since summer, which was a wonderful one by the way! Then September came and my kids went back to school. My baby girl started kindergarten. My husband and I celebrated our birthdays. Threw a fire truck birthday party for the kids in October. School Halloween parties. Plus other routine pick-ups, drop-offs, activities, play dates, client orders and deliveries.

On top of everything, we had to visit a few paediatricians and dermatologists last month as both of my kids happened to have the same skin rash. And the whole experience about communicating with the doctor’s office was a freaking nightmare! No details here but I will never forget how insanely the mama bear in me had tore open my chest and roared at real human beings!

I am so relived that it’s all over. Kids’ rash is getting better. And I am ready for my busy December with the Christmas cookie gift box orders. This is my third year doing this. Same as last year, I’d started to ask myself if I should do this again this year considered how much work it involves. It’s pretty labour intensive! Before I was able to answer myself, I already received calls from my clients requesting to place orders. So here we are getting ready for another busy Christmas! For those who are not living close to me, you could totally check out these delicious yet very easy-to-make donuts.

You don’t need anyone to remind you that banana, chocolate chips and dulce de leche are really good friends. And when they come together in a donut form, oh my god, tell me how many dozens you are going to have!

Ingredients:
1 large egg
1/2 cup granulated sugar
1 very ripe bananas, mashed
1/4 cup vegetable oil
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup dark chocolate chips
1/2 cup store brought dulce de leche
1/4 cup chocolate jimmies

Directions:
Preheat oven to 350F. Grease mini donut pan(s).
In a bowl, whisk together egg, sugar, banana and oil until smooth.
Sift in flour, baking soda, baking powder and salt. Stir until just combined.
Fold in chocolate chips.
Spoon the batter into the prepared pan(s) and bake for 8 to 10 minutes. Let cool on a wire rack.
Dunk each donut into dulce de leche, and place it on a wire rack.
Sprinkle chocolate jimmies on top.

  1. I wish I lived closer to you because I really want to order the cookie boxes from you! It looks gorgeous!!!!! Too bad I live in the states. So I think I will make these donuts instead!
