Lemon Vanilla French Toast with Fresh Berries

As a baker myself who plays around with eggs all the time, I can’t love eggs better! They are also versatile enough to be enjoyed alone (oh my lovely soft boiled eggs!), or go with toasts, salads, soups, or any savory dishes…

To celebrate this lovely World Egg Day, I want to honour the humble eggs by making this lemon vanilla French toast. Such a simple and flavourful egg-rich breakfast that you can enjoy every day! Ingredients (6 to 8 toasts):
1 cup whole milk
4 large eggs
1 teaspoon vanilla
1/4 cup freshly squeeze lemon juice
1 tablespoon lemon zest
6 to 8 slices thick sliced bread
2 tablespoons unsalted butter
1 cup whipped cream
2 cups fresh berries
1/2 cup maple syrup

Directions:
In a bowl, mix together milk, eggs, vanilla, lemon juice, and zest.
Dip both side of each bread slice into the egg mixture. Make sure it’s completely soaked.
Heat a medium-sized skillet over medium heat with light coating of butter.
Place bread slice in skillet and cook until golden brown on each side, about 2 to 3 minutes. Remove from heat and cover with tin foil to keep warm. Continue with the remaining bread slices.
Serve warm with whipped cream, fresh berries, and maple syrup.
