So we are back! From our long road trip all the way to California! Portland, Oregon Coast, San Francisco, Los Angeles and San Diego. Disneyland, Legoland, SeaWorld and San Diego Zoo. All the playing, driving, walking, lining up, sweating, yelling, nagging, whining… and we came back with a huge load of cherished memories. We’ve also learned so much from this epic road trip, and I would love to share our experiences over the family page. Stay tuned.
I knew that I had to go buy mascarpone right away and made this blueberry lemon icebox cake after I came across the recipe from Bon Appetit. But then I got busy and I got a very forgetful mind. And I just forgot to buy it every time I went to a grocery store.
I love coconut! If you do too, you should totally make these coconut ice cream sandwiches. Coconut ice cream is nestled in-between coconut shortbread cookies, then rolled with more shredded coconut! Oh my! Such a coconut addict’s dream!
It has waffle. It has ice cream. So call it breakfast dessert if you want! But you know you are allowed to eat it any time.
I was just looking to get rid of that bag of leftover waffles. And then I glanced over to the other side of the freezer and spotted that box of vanilla ice cream. Then I remember up in the fridge sitting a jar of blueberry sauce that I made for these blueberry cupcakes a few days ago. So there we had a wonderful combo of waffle ice cream sandwich!
Let me elaborate. This cake should be called “strawberry sorbet, mango ice cream and vanilla ice cream on an Oreo crust”. Just a layer of everything. Very straight forward. But I figured it would be nicer to call it Summer Delight, because this treat has everything that makes everyone happy!
